
Sausage Rolls
A recipe from Estelle Human. These are the sausage rolls that disappear first at any gathering — a warmly spiced beef filling in crisp, golden pastry.
Ingredients
- 1 onion, chopped or grated
- 500 g ground beef
- 1 tsp cumin
- 1 tsp ground coriander
- 1 tsp turmeric
- 1 tsp salt
- 1 tsp pepper
- 3 cups flour (for the pastry, or use ready-made puff pastry)
- 2 eggs (1 for the filling, 1 beaten for egg wash)

Preheat the oven to 350°F (180°C) and line a baking tray.

In a bowl, combine the ground beef, onion, cumin, coriander, turmeric, salt, pepper, and 1 egg. Mix well until evenly seasoned.

Roll out your pastry into long rectangles. Spoon the beef filling in a line down the centre of each.

Fold the pastry over the filling and seal the edge, then cut into individual rolls.

Place seam-side down on the tray and brush the tops with the beaten egg.

Bake for approximately 30–40 minutes, until the pastry is golden and the filling is cooked through.
Notes
Ready-rolled puff pastry makes these quick for a weeknight; homemade shortcrust from the flour gives a sturdier, more traditional roll. Serve warm with chutney or tomato sauce.
