
Pannekoek

A recipe from Estelle Human. Pannekoek are thin, soft pancakes — nothing like the fluffy stack. Roll them up warm with cinnamon sugar the traditional way, or load them with whatever the family fancies.
Ingredients
- 1 cup flour
- ¼ tsp baking powder
- ½ tsp salt
- 250 ml milk
- 1–2 large eggs
Method

Mix the dry ingredients together.

Beat the egg(s) and add the milk.

Mix everything together until smooth, with no lumps.

Lightly spray a pan with oil and place over medium heat.

Pour in a thin layer of batter, swirling to coat the pan. Flip when brown on one side and cook the other side until golden.
Optional Toppings
- Cinnamon sugar
- Strawberries
- Nutella
- Whipped cream
- Maple syrup
Notes
Let the batter rest for a few minutes before cooking for the softest pannekoek. Keep them warm and stacked under a clean tea towel while you work through the batter.
