Milk Tart(s)

A recipe from Estelle Human. Milk tart is one of those desserts that tastes like home, and this microwave method means you can have it done in about twenty minutes — no fussing over a stovetop.

Ingredients

For boiling:

  • 2 cups milk
  • 1 tbsp butter
  • Cinnamon, for sprinkling

For whisking:

  • 2 eggs
  • ½ cup sugar
  • 2 tbsp flour
  • 2 tbsp cornstarch
  • ½ tsp vanilla
  • Pinch of salt

To finish:

  • Sweetened tart shells

Method

    Put the milk and butter in a microwave-safe jug and bring to a boil in the microwave, 1 minute at a time (approximately 3–4 minutes total).

    In a bowl, whisk together the eggs, sugar, flour, cornstarch, vanilla, and salt until smooth.

    Pour the boiled milk into the bowl and mix well.

    Microwave again, 1.5 minutes at a time (approximately 4 minutes total), until thickened.

    Scoop into the sweetened tart shells and sprinkle cinnamon on top.

Notes

Serve chilled or at room temperature. The custard sets further as it cools, so don't worry if it looks a little soft coming out of the microwave.
