
Malvapoeding

A recipe from Estelle Human. Malva pudding is pure comfort — a soft, caramelly sponge that soaks up a warm creamy sauce until it's impossibly moist. It's the pudding that ends every good South African Sunday lunch.
Ingredients
Pudding
- 1 cup flour
- 1 cup milk
- 1 tbsp apricot jam
- 1 tsp baking soda
- ½ cup sugar
- ½ tsp baking powder
- 1 egg
Sauce
- 125 g margarine or butter
- 1 cup sugar
- ½ cup boiling water
- 1 large can evaporated milk

Beat the egg and sugar until very creamy. Add the remaining pudding ingredients except the milk and baking soda, and mix well.

Heat the milk slightly and add the baking soda. Mix into the previous mixture.

Bake at 360°F (180°C) for 1 hour.

Bring the sauce ingredients to a boil for 5 minutes, then pour slowly over the hot pudding. Cover and let it soak in.
Notes
Pour the sauce over while the pudding is still hot from the oven so it drinks it all up. Serve warm with custard, cream, or a scoop of vanilla ice cream.
