
Garlic & Lemon Seared Steak Bites with Zucchini Noodles
Adapted from a Mealime recipe. Steak bites seared hot and fast, then coated in a garlicky lemon pan sauce and piled over zucchini noodles. It's on the table in about half an hour and feels far more indulgent than the effort suggests.
Ingredients
- 0.68 kg striploin (New York strip) steak
- 4 medium zucchini (courgettes)
- 6 cloves garlic
- 1 lemon
- 237 ml chicken or vegetable broth
- ⅓ cup coconut aminos
- ¼ cup unsalted butter
- 2 tbsp extra virgin olive oil
- 2 tsp parsley flakes
- ½ tsp black pepper
- ⅛ tsp crushed red pepper

Wash and dry the lemon; zest and juice it into a medium bowl.

Peel and mince the garlic; add to the bowl with the lemon.

Add the broth, coconut aminos, parsley flakes, black pepper, and crushed red pepper to the bowl; whisk to combine the sauce and set aside.

Wash the zucchini, trim the ends, and use a julienne (or regular) peeler to make noodles. Use a paper towel or clean cloth to squeeze the excess moisture out of the zucchini noodles.

Preheat a large skillet over medium-high heat.

While the skillet heats up, pat the steak dry with paper towels, then cut into 1-inch cubes.

Once the skillet is hot, add the olive oil and swirl to coat the bottom.

Add the steak and cook, stirring occasionally, until desired doneness — 4–5 minutes for medium. Transfer to a plate and set aside.

Add the sauce to the skillet and whisk. Cook, stirring frequently, until the mixture is reduced by about half, 5–6 minutes.

Stir in the butter and, once melted, add the zucchini noodles. Cook, stirring constantly, until just tender, 3–4 minutes. Use tongs to remove them from the skillet and portion onto plates, leaving the excess sauce in the pan.

Return the steak to the skillet and toss to coat in the sauce, then spoon over the zucchini noodles. Enjoy!
Notes
Get the skillet properly hot before the steak goes in — a good sear happens fast and keeps the bites juicy. Squeezing the zucchini noodles dry first stops the sauce from going watery.
