Avocado Toast

Some breakfasts don't need to be complicated. This is the one I make when I have five minutes and I want to actually feel good after eating it.
## Ingredients
- 2 slices sourdough or whole grain bread
- 1 ripe avocado
- ½ lemon, juiced
- Flaky sea salt and black pepper
- Red chilli flakes (optional)
- 2 eggs, poached or fried (optional but recommended)
## Method
1. Toast your bread until golden and sturdy enough to hold the toppings.
2. Halve the avocado, remove the stone, and scoop the flesh into a bowl.
3. Add the lemon juice, a good pinch of salt, and mash to your preferred texture — I like mine a little chunky.
4. Spread generously over the toast.
5. Top with black pepper, chilli flakes, and eggs if using.
## Notes
Ripe avocado is everything here. If yours isn't ready, leave it on the counter next to a banana overnight — it speeds things up. A drizzle of olive oil and everything bagel seasoning also takes this somewhere special.
